This natural processed coffee comes from over 600 smallholder farmers in the Gotiti Kebele area of Yirgacheffe, one of the most renowned coffee-growing regions of Ethiopia and processed at the Huke Washing Station.

Cherries were hand-sorted and floated to separate by density. After initial separation, rinsed cherries are laid out to dry on raised beds in layers 5cm thick, where the cherries are turned 5 to 6 times per day to ensure even sun exposure and rate of drying. This is done over a period of 15-21 days until the cherries reach a moisture content of 11-12%.

The site is operated by Testi Trading and owned by the Yonis family, and makes significant investments in the communities that they operate in through their Project Direct initiatives.

Flavor

We taste fresh strawberries and sweet navel orange with a rose tea florality. Juicy, fruity, and floral as all great Yirgacheffe coffees are.
